Perfect for taking to school, sharing as a treat, or enjoying after school with a warm cup of herbal tea. There’s something so comforting about the taste, aroma, and texture of madeleines that brings back beautiful memories for me. This Keto version is every bit as delightful as the traditional recipe.

I initially developed this easy keto madeleine recipe for my son, who has been following the ketogenic diet due to epilepsy for seven years. Later, I refined it for Keto Cafe by Nutricia. My son truly loves these delicious low-carb madeleines!

Ingredients for Easy Keto Madeleines (20 servings):

  • A pinch of salt
  • 100 g egg
  • 78 g butter
  • 75 g almond flour
  • 50 g Steviala Kristal Sweet (or another keto-friendly sweetener)
  • 30 g heavy cream
  • 10 g vanilla extract
  • 3 g cream of tartar baking powder

How to Make Keto Madeleines:

  1. Preheat Oven: Preheat the oven to 165°C (329°F) on the convection setting.
  2. Melt Butter: Melt the butter in a saucepan or microwave.
  3. Mix Eggs: In a large mixing bowl, whisk the eggs with a pinch of salt using a hand blender for about 1 minute.
  4. Combine Wet Ingredients: Add the melted butter, heavy cream, and vanilla extract to the eggs. Blend again for another minute.
  5. Add Dry Ingredients: Switch to dough hooks on the hand blender. Gradually mix in the almond flour, followed by the Steviala Kristal Sweet, and finally the cream of tartar baking powder.
  6. Blend Batter: Blend until the batter is smooth and uniform.
  7. Fill Molds: Pour the batter into a silicone madeleine mold for 20 mini madeleines.
  8. Bake: Bake for approximately 15 minutes in the preheated oven.
  9. Cool and Serve: Allow the madeleines to cool completely before removing them from the mold. Serve and enjoy!
