Ingredients (10 Servings of 110 g)
- 200 g eggplant
- 200 g heavy cream
- 200 g peeled tomatoes (canned)
- 200 g ground meat
- 125 g mascarpone
- 100 g crème fraîche
- 50 g egg (1 egg)
- 50 g shallots (2 pieces)
- 50 g macadamia nuts
- 30 g olive oil
- 30 g tahini
- 30 g grated 50+ cheese
- 15 g tomato paste
- 5 g MCT oil
- 8 g garlic (2 cloves)
- Salt to taste
Instructions
1. Prepare the Eggplants
- Wash and partially peel the eggplants in zebra stripes.
- Slice them lengthwise into thin slices.
- Heat 20 g of olive oil in a pan and grill the slices until browned (10-15 minutes). Set aside.
2. Make the Keto Béchamel Sauce
- Combine mascarpone, heavy cream, crème fraîche, egg, grated 50+ cheese, tahini, and MCT oil in a saucepan.
- Heat on low, stirring constantly to avoid lumps.
- Season with salt and pepper. Stir until creamy and thickened, then remove from heat.
3. Prepare the Meat Sauce
- Chop macadamia nuts, shallots, and garlic.
- Sauté shallots and garlic in 10 g of olive oil until soft.
- Add ground meat and cook until browned.
- Stir in peeled tomatoes and simmer briefly.
- Add 3 tablespoons of béchamel sauce for extra creaminess. Remove from heat.
4. Assemble the Moussaka
- Preheat the oven to 180°C (fan). Grease a baking dish with olive oil.
- Layer eggplant slices, meat sauce, and béchamel sauce. Repeat.
- Finish with béchamel sauce and sprinkle grated cheese on top.
5. Bake
- Bake for 35-40 minutes.
- Optionally, cover with foil in the last 10 minutes to avoid burning.
Storage Tips
- Refrigerate: Store for 3-4 days in an airtight container.
- Freeze: Up to 3 months. Cool completely before freezing in portions.
- Reheat: Defrost in the fridge for 24 hours. Reheat in a preheated oven at 180°C for 20-30 minutes.
