Keto Joy: Real Pasta for the First Time in Years!

After five years of Konjac pasta and courgetti (for example: spaghetti made from zucchini with salmon and Parmesan cheese), it was a real treat for Naois to finally be able to taste real pasta (with macadamia nuts) within his keto diet, thanks to our gradual transition to a lower ketogenic ratio. Fortunately, we are not seeing an increase in seizures, which is encouraging.

A Relaxing Family Outing

During a delightful family outing to the zoo, followed by a relaxed gathering at a café, the long-awaited moment arrived. With the sauce prepared, the pasta cooked, and the macadamia nuts roasted, it was simply a matter of warming up the dish at the café.

Ingredients Keto Pasta with whipped cream and roasted macadamia nuts

  • 30 g We Care Low Carb Penne
  • 15 g Whipping cream
  • 18 g Olive oil
  • 25 g Macadamia nuts
  • 10 g grated Parmesan cheese

  1. Bring a large pot of water to a boil.
  2. Finely chop the macadamia nuts.

  1. Roast the macadamia nuts in a frying pan until golden brown and smelling good. Remove from heat as soon as they are ready.
  2. In a bowl, combine the grated Parmesan cheese, olive oil and whipping cream.
  3. Cook the penne according to the instructions on the package until al dente.
  4. Mix the penne with the sauce of olive oil, Parmesan cheese and whipping cream.
  5. Serve the penne with the sauce on a plate and sprinkle the roasted and chopped macadamia nuts on top.

Tips for Customization

  • For a lower ketogenic ratio: reduce the amount of cream, macadamia nuts or olive oil, or increase the amount of penne.
  • For a higher ketogenic ratio: reduce the amount of penne, or increase the amount of macadamia nuts, cream and olive oil.
